8 skinless, boneless chicken breasts
8 (10 inch) flour tortillas (warmed)
2 cups shredded lettuce
2 tomatoes, chopped
1 cucumber, sliced to fit in tortillas
1 cup of cooked rice (optional)

Sauce Ingredients
1 cup Fat Daddy's Mesquite Sauce

2. In a separate bowl, mix Fat Daddy's Mesquite Sauce, ranch dressing, salt, and pepper together. Stir until sauce is thoroughly combined. Set aside.
3. Spray a large skillet with nonstick cooking spray or substitute preferred oil. Add chicken strips, cook over medium-high heat for 12 to 15 minutes, or until light brown and juices run clear. As an alternative, chicken breasts may be cooked on outdoor grill on medium-high heat until all pink is gone.
4. Fill each warm tortilla with lettuce, tomatoes, cucumbers, chicken strips, and optional rice. Drizzle sauce over entire filling. Fold in both sides of tortilla.
